Veggie & Cheese Mini Muffins

🥄 Ingredients:

  • 1 cup shredded zucchini (squeeze out moisture)
  • 1/2 cup shredded carrot
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 2 eggs
  • 1/4 cup olive oil or applesauce
  • 3/4 cup whole wheat or oat flour
  • 1/2 tsp baking powder
  • Optional: pinch of garlic powder or dried herbs

🔪 Directions:

  1. Preheat oven to 350°F (175°C).
  2. Mix all ingredients in a bowl until well combined.
  3. Spoon into a mini muffin tin (greased or lined).
  4. Bake for 15–18 minutes or until golden and set.
  5. Cool slightly and serve warm or cold!

🌱 Tips:

  • Freeze extras and reheat in a toaster oven.
  • Add chopped spinach or finely diced bell pepper for variety.
  • Works great as a toddler lunch with fruit and hummus!
