Sweet Potato Banana Pancakes (No Flour)

🥄 Ingredients:

  • 1 small cooked sweet potato (about 1/2 cup mashed)
  • 1 ripe banana
  • 2 eggs
  • Optional: pinch of cinnamon or vanilla extract

🔪 Directions:

  1. In a bowl, mash the banana and sweet potato together until smooth.
  2. Whisk in the eggs and optional cinnamon or vanilla.
  3. Heat a nonstick pan or griddle over medium heat.
  4. Scoop small amounts (about 1–2 tbsp) onto the pan.
  5. Cook for 2–3 minutes on each side, or until golden and set.
  6. Let cool slightly and serve warm.

🌱 Tips:

  • These are soft and easy to chew — great for baby-led weaning or finger food
  • Store leftovers in the fridge for 2–3 days or freeze and reheat
  • Serve with yogurt, nut butter, or fruit slices
