Mini Chicken Veggie Patties

🥄 Ingredients:

  • 1 cup ground chicken (or finely shredded cooked chicken)
  • 1/3 cup grated zucchini (squeeze out moisture)
  • 1/4 cup grated carrot
  • 1 egg
  • 1/4 cup breadcrumbs or oat flour
  • Optional: pinch of garlic powder or paprika

🔪 Directions:

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix all ingredients until combined.
  3. Form into small patties (about 2 inches wide).
  4. Place on a lined baking sheet.
  5. Bake for 15–18 minutes, flipping halfway, until golden and cooked through.
  6. Cool slightly before serving.

🌱 Tips:

  • Serve with a yogurt dip or guacamole
  • Great warm or cold (perfect for lunchboxes)
  • Freeze and reheat in the toaster oven or air fryer
